Spring Cocktail Preview: What's Growing in Denver Glasses This Season

Lighter and brighter

Spring means a change of seasons is here and along with it a change in Denver’s cocktail menus. The warm and hefty drinks of winter are giving way to lighter and brighter fare. Why not watch the leaves turn green with one of these delicious cocktails from Denver’s best bartenders.

Spicy Mango Margarita
Tamayo (1400 Larimer St.; 720-946-1433)
Add a little spice to springtime with this tasty margarita from Tamayo (pictured above) in Larimer Square. The drink includes Serrano-infused blanco tequila, sour simple syrup and citrus. That’s it! Enjoy on the newly updated rooftop patio. Available for a limited time.

Blood and Bubbles
Session Kitchen (1518 S. Pearl St.; 720-763-3387)
Enjoy the unusual on South Pearl Street with the Blood and Bubbles cocktail this spring. Made with Ruffian Prosecco, Leopold Bros. 3 Pins, St. Germain and blood orange juice, this light and sparkly cocktail will dress up those spring nights, even with the creepy name.

Daiquiri Kaffir
Zengo (1610 Little Raven St., Unit 100; 720-904-0965)
Zengo in Riverfront Park is putting together a menu based on the foods of Cuba and Thailand and the cocktails will also reflect those countries. The Daiquiri Kaffir features Bacardi Castillo, kaffir lime simple syrup and fresh lime juice to bring together the best tastes of both countries. Available for a limited time.

Garden Grace
Guard and Grace (1801 California St.; 303-293-8500)
This new steakhouse downtown is having fun with the cocktail menu this spring. The Garden Grace cocktail (the name is a play on how people pronounce the restaurant’s name and is also named for Chef Troy Guard’s daughter) contains Bombay Sapphire gin, fresh carrot apple juice, honey ginger shrub, sparkling apple cider and is served with a sliced apple on the glass.

Marco’s Pineapple Mojito
Marco’s Coal-Fired Pizza (2129 Larimer St.; 303-296-7000)
Over at Marco’s in the Ballpark neighborhood, the bar is introducing the Pineapple Mojito. Made with fresh pineapple that is muddle with lime juice and vodka, the drink contains vodka, pineapple juice, soda water, squeezed lime and mint leaves and is topped with a splash of Prosecco. Tastes like a game day cocktail to us.

Spring Views

Central Bistro (1691 Central St.; 303-477-4582)
Enjoy the downtown views at this Highlands hot spot. While soaking in those views, drink the Spring Views cocktail made with lavender, lemon zest, sparkling wine and rose water. The folks at Central call it sunset in a glass.

Basil Lemondrop Martini
Wazee Super Club (1600 15th St.; 303-623-9518)
This taste of spring includes Sobieski vodka, triple sec, fresh lemon juice and basil simple syrup. This drink even looks like spring sunshine.

Strawberry Fields
Parallel Seventeen (1600 E. 17th Ave.; 303-399-0988)
Strawberries are a spring favorite so this cocktail features fresh strawberries marinated in agave nectar, then blended into a puree and strained with vodka and touch of agave. Served in a martini glass with a strawberry, this drink says spring is already here.
