Pulque
A traditional drink from central Mexico, pulque is made from the fermented sap of the maguey plant. Milky white in color and thick and sour on the palette, pulque’s popularity fell as beer’s rose, since beer was cheaper and easier to produce (and arguably better tasting, too). Although pulque has been around for millennia, it is relatively unknown outside of Mexico. While some special bars - known as pulquerías - still serve it, you don’t necessarily have to board a plane to taste it. Look for pulque in a can if you live in the United States.
