Mint Juleps and the Kentucky Derby
The classic derby drink is a staple in Rex 1516's cocktail program and has been perfected by GM and mixologist Heather Rodkey. The simple and timeless combination of whiskey, mint, sugar and club soda at $8 is just what you need to get into the horseracing spirit. For this weekend only bartender Sweet Lou has created a special derby version with peach-infused cognac, also priced at $8. Both cocktails go perfectly with their bacon-scallion hush puppies with Cajun ailoi, also on special just for this weekend, at $5 for an order of five.
If something sweet is more your speed, as a part of their new spring dessert menu, Executive Chef Justin Swain has turned the cocktail on it’s head to create a uniquely decadent dessert. The Mint Julep pairs a rich mint chocolate pot de crème, topped with candied mint leaves, and a pecan macaroon filled with whiskey cream frosting. The house-made dessert, which is also completely gluten-free, is also $8.
