Barrel-Aged White Monkey Coming Soon From Victory
It was only a matter of time before Victory Brewing Company gave us a new and improved version of its trusty Belgian Triple, Golden Monkey.
We’ve seen them do it before with Wild Devil, their flagship Hop Devil funked up with a strain of Brettanomyces yeast, and Red Thunder, their Baltic porter aged in red wine barrels. Now comes White Monkey, a new and novel take on one of their most popular beers.
Just like its Golden predecessor, it’s brewed with imported two row malts, whole flower European hops, coriander seed and Belgian yeast, but rather than going to the bottling line at the end of the brewing process, the White Monkey gets put in American white oak barrels, which were previously used to mature white wine, and aged at ambient temperatures at their Downingtown brewery for three months.
According to Victory, the end result is a smoother, silken ale with a whole new depth of flavor and complex nuances developed during its time spent resting on wood. The beer will be available in coming weeks in special, limited edition 750ml caged and corked bottles. Of course, a limited number of kegs will soon be circulation too.
