Fette Sau Teaming Up With High West Distillery for Pig and Whiskey Dinner, Tues., April 1
Fishtown’s Fette Sau, the Stephen Starr-backed local outpost of Joe Carroll’s Brooklyn-based bastion for barbecue, beer and bourbon, will host Troy Karnes from Utah’s small-batch whiskey producer, High West Distillery, for a special four-course pig and whiskey dinner on Tuesday, April 1, at 7 PM.
The menu for the evening will feature whole roasted suckling pigs — gently smoked for hours in advance — served with a whiskey jus and braised swiss chard, and paired with High West’s whiskies. The $65 per person prix fixe will also include lamb ribs with chilled chickpea salad; smoked duck leg with potato and fennel confit, orange and arugula salad; and house-baked brownies and cookies for dessert.
