Old City's Royal Boucherie is hosting an autumnal dinner centered around hard cider, including selections from Three Springs Fruit Farm, Ploughman Cider, and Green Meadow Farm.
Ben Wenk, the seventh-generation farmer of Three Springs Fruit Farm and Ploughman Cider, will be on hand to discuss the process of cider-making, and the menu, created by Chef Nicholas Elmi, offers four courses, which are paired with either a cider cocktail or cider varietal. Courses include:
Roasted Acorn Squash
Red quinoa porridge, mustard greens, pepitas
Pennsyltucky; Lemon Infused White Rye, Stark Cider, Génépy and Honey
Rigatoni
Cauliflower bechamel, brassica pistou, hazelnuts, feta
Stayman Winesap Cider
Green Meadow Farms Capon
Foie Gras & pain au lait stuffing, braised cabbage, chestnuts, pomegranate jus
Churchyard Cider
French Apple Cake
Apple Caramel, pumpkin spice
Beaucoup de Pommes
