Whetstone Will Bring the Brauhaus Schmitz Crew to Fifth and Bainbridge

With his forthcoming book New German Cooking (Chronicle Books) set to drop next fall, Brauhaus Schmitz chef Jeremy Nolen isn’t wasting any time taking on his next task. That’s opening a new bar and restaurant called Whetstone. And according to Philly.com, it will come together over the next few months at the corner of Fifth and Bainbridge streets in Queen Village.

For this project, Nolen and Brauhaus owners Doug and Kelly Hager plan to deviate from the German focus of their little slice of Bavaria on South Street, and it’s spinoff Wursthaus Schmitz at Reading Terminal Market. Whestone will have more of a regional American vibe that is reportedly inspired by Nolen’s upbringing in Reading. Whetstone is his mother’s maiden name.

Plans call for 20 taps at the bar, plus cool cocktails, wine and bourbon. The debut is penciled in for summer.
