New Distillery Plans to Open in Runnemede

First came wine, then the breweries and now a new wave of libations is sweeping across New Jersey in the form of distilleries. First came Cooper River Distillers in Camden, then Jersey Artisan in Fairfield. And now Irish Hill Distillery, a new spirits shop in Runnemede, is set to open soon.

Officially incorporated on February 14, Irish Hill comes under the ownership of brothers Sean and Eric Tighe, who were inspired to open the distillery in 2013 after New Jersey Gov. Christie’s craft distillery license significantly reduced the cost of craft distillery licenses. It will be the first legal distillery in operation in the area since before Prohibition. The brothers hope to use only local, all-natural ingredients and grains for their products.

While there is no current opening date, Irish Hill has selected a location in Runnemede and begun work toward the future. Irish Hill also plans to invest in eco-friendly operations, including recycling mash and using electric distilling machinery. With a small-batch focus, the distillery hopes to produce a full range of liquors including rum, vodka, gin, whiskey and moonshine.

Until the liquor begins flowing, those interested can check out several cocktail recipes on the distillery’s website with names that may be familiar to locals, like the Exit 3 Mojito and 2nd Woods Punch.
