2) Last Word and Pecorino Ginepro
I used Bluecoat to create the classic gin cocktail known as the Last Word - it’s a great, summery, late afternoon cocktail that tastes light and floral. To go along, Rocco picked a Pecorino Ginepro sheep’s milk cheese that had a crushed-juniper-berry rind - a nod to the juniper in the gin - and finished the wedges with a rich and tangy balsamic vinegar. This simple combination was magical, and I couldn’t resist mopping up the extra balsamic with the cheese in between sips. The subtle juniper in the cheese rind suited the Last Word extremely well, giving both the cheese and the drink more flavor depth.
