This Paso Robles, CA-based brewery lead a second California gold rush, in terms of Great American Beer Festival medals anyway. Among 16 golds, the brewery earned back-to-back medals for 70 IBU Union Jack. If you want to know why opening a bottle smells so good, look to the (rather insane) four pounds of hops per barrel and the dry-hopping regimen: Amarillo, Cascade, Centennial, Citra, Chinook, and Simcoe (7.5% ABV).
