Shiprock Popup Brings Navajo Tacos and Frybread to The Garage, Mon., March 17
Jerky magnate and DrinkPhilly contributor Marcos Espinoza is once again teaming up with Taqueria Feliz chef Lucio Palazzo and illustrator Hawk Krall to host another evening of Navajo tacos and frybread under the banner of Shiprock Popup.
This time they’re setting up shop in the stationary food cart at South Philly’s Garage on Monday, March 17, from 6 PM “until the food runs out.”
As with previous Shiprock pop-ups, the trio will be serving up traditional frybread tacos — the regional phenomenon of puffy dough rounds fried crisp and stuffed with taco-night fixin’s like chili beans, ground beef and shredded cheese — a comfort food staple found primarily in the Navajo Nation and in Native American communities throughout the Southwest.
For this latest round, they will also offer a goat birra frybread taco with nopales and fava beans, and a Navajo hot dog, plus vegetarian options and some other surprises that should pair nicely with The Garage's endless stock of canned craft beer. For dessert, there's sweet frybread with honey butter shipped in from Utah.
