Son of a Gun: Jose Pistola's Crew Bring Sancho Pistola's to Fishtown
Robert "Bubba" Kolbasowski might have scored his own Food Network show during shuttered Fishtown barbecue joint Bubba’s Texas BBQ’s brief run, but sadly, the restaurant never really took off. Enter Casey Parker, Joe Gunn and Adan Trinidad, the dynamic trio from Center City’s Jose Pistola’s who’ve put their golden touch on the vacant West Girard Avenue property, and will open it as Sancho Pistola’s on Wed., Jan. 29 at 7 PM.
Working the same formula that’s made their OG Pistola’s such a popular hang for the past seven years, this latest development along Fishtown’s booming bar and restaurant corridor will likely enjoy a much lengthier stay. Parker and Gunn bring their Jedi-like hospitality skills, and craft beer-curatorial prowess center stage, while Trinidad’s hip take on Mexican munchies completes the scene.
Sancho’s will have 10 taps dedicated to local and craft beers, and a deep stock of bottles to meet the needs of almost every type of beer dork’s tastes. In addition to beers, we’re told the bar will have a “sexy selection” of tequila and mezcal.
Chef Trinidad’s menu will cover the obligatory nachos, tacos and burritos, but takes a more ambitious turn with more sophisticated fare like Hamachi Tiradito with lime soy, Serrano pepper and furakake; a hearty pork porterhouse with the chef’s highly praised mole verde, corn puree and pickled red onions; and scallop tacos with pickled raisins, cilantro and harissa.
The bar will open will be open Monday through Friday from 4 PM to 2 AM, with a full menu served until 1 AM. Brunch kicks off on February 8, and will be served every Saturday and Sunday following starting at 11 AM.
