Blackberry Farms Screaming Cock Dubbel + Duck Rillettes on Black Brioche
Bon Appetit just named Tennessee boutique resort Blackberry Farm the best hotel for “food lovers” in the country, and a lot of it has to do with the brewing program, which was launched just a year ago. We tried Screaming Cock because of its name, but came away impressed with the deep flavors of the abbey-style ale, which is rich but not overwhelming, coming in at just 6% ABV.
The dried fruit notes that were very present in the back of the brew did a good job cutting the richness of the rillettes, which by their nature are very fatty and unctuous. We actually could have done without the brioche, and ended up eating most of the duck off the top, washing it down with sips from the Cock (heh, heh).
