The Lost Abbey Saint’s Devotion + Crispy Pork Belly in Kimchee Rice Balls

The tagline for Port Brewing’s Lost Abbey brand says the beer is “for sinners and saints alike,” and we can’t think of many foods more sinful than crispy pork belly. On the angelic side is the beer, but the “saint” in the name is actually indicative of a wicked bout of tangy flavor (we mean that in the best way).

Saint’s Devotion is the California brewery’s regular Devotion pale ale, allowed to bottle condition with Brettanomyces yeast to create a delightfully puckery Belgian sour. It cuts right through the umami and spice combo of the pork belly-kimchee ball, and leaves you wanting more of each one.
