At Marcie Turney and Valerie Safran’s Midtown Village Mediterranean, cinnamon roasted apples are muddled in a glass and mixed with Calvados (a French apple brandy), lemon juice and Cointreau. The mix is then shaken, drained over ice and served in a highball glass with a slice of green apple. It’s basically a tipsy orchard waiting to invade your mouth.
