Marching west to Paris, at this Rittenhouse bar you’ll find a variation on a French 75 named for a piece of artillery that mimics the kick of the drink. Rooibos-infused cognac (Comandon VS), Pierre Ferrand dry curacao, fresh lemon and muddled orange peel are briefly shaken and double-strained into a coupe glass. It’s topped with a splash of dry sparkling wine and garnished with burnt orange peel. Boom!
